Recipe Ingredients:
- 1 egg beaten with two tablespoons of water
- 1 tablespoon grated fresh ginger root
- 1 tablespoon of softened butter or margarine (or any other cooking oil you prefer)
- 1/3 cup sugar
- 3/4 cup flour (all-purpose, whole wheat, or a mix of both)
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon (or cloves or allspice to taste)
Recipe Instructions: Combine the first four ingredients together in a large bowl and stir well. Add the baking soda, salt, and cinnamon to the dry ingredients and combine well. Stir in the grated ginger root. Drop tablespoonfuls of dough onto greased cookie sheets about 2 inches apart and bake at 350 degrees Fahrenheit for about 10 to 12 minutes or until lightly brown on top.
