Coconut muffins

The  Swahili coconut muffins are easy to make, freezable, and are the perfect breakfast or snack on the go. Here is a quick guide:

Ingredients of a coconut muffins

½ cup flour
¼ cup sugar
3 eggs
½ teaspoon baking powder
¼ litre milk
200ml coconut milk
1 teaspoon Vanilla essence
Butter

Procedure

Preheat oven to 325 degrees. Grease or line muffin cups with paper liners.
Whisk eggs, butter, coconut milk, sugar, vanilla essence and milk.
Mix flour and baking powder together in a separate bowl
Stir well the two mixtures until batter is just combined.
Pour batter into prepared muffin cups.
Bake in the preheated oven until a skewer inserted in the center of a muffin comes out clean, normally about 15 – 20 minutes.
Serve with a  cold/hot drink
